Sourcing the Finest Grains

We believe great spirits start with great ingredients. That's why we partner with family farms across New York State to source the highest quality corn, rye, and barley. Our grains are non-GMO and grown within 100 miles of our distillery.

The Mash

In our 500-gallon mash tun, we cook our grains with pure Brooklyn water at precise temperatures to convert starches into fermentable sugars. This critical step determines the character and sweetness of our final spirit.

Open-Air Fermentation

Unlike most modern distilleries, we use open-top fermentation tanks. This allows wild Brooklyn yeast and local microflora to influence our mash, creating complex, terroir-driven flavors that are uniquely Van Brunt.

Copper Pot Distillation

Our 250-gallon copper pot still is the heart of the distillery. We double-distill every batch, making careful cuts to capture only the "hearts"—the purest, most flavorful portion of the distillate.

Patient Aging

Time is our final ingredient. Our whiskey rests in new, charred American oak barrels in our waterfront rickhouse, where Red Hook's maritime climate creates unique aging conditions. We never rush—spirits are released only when ready.
